
Caramel-Rhubarb Pudding
This recipes was shared by Kiwi WWOOF Hosts as a part of Kelsey's fieldwork in Coastal Otago. The recipe was selected because it was a favourite amongst the Hosts' children and previous WWOOFers.
Ingredidents
Crust: Rhubarb layer: Topping:
¾ cup flour 4 cups diced rhubarb ¾ cup brown sugar
½ cup rolled oats ¼ cup boiling water 1 tbsp corn flour
¾ cup castor sugar
100g butter
Directions

Put diced rhubarb into ovenproof baking dish.

Make crust:

Sift flour and baking powder into a bowl, adding rolled oats and sugar.

Melt butter and stir into dry ingredients.

Mix well

Sprinkle crust over rhubarb.

Make topping:

Combine brown sugar and corn flour.

Mix well.

Spoon topping over crust.

Carefully pour water over; do not stir.

Bake at 180 C / F for approx. 30 minutes or until cooked.

Serve with custard or cream.
