Caramel-Rhubarb Pudding

This recipes was shared by Kiwi WWOOF Hosts as a part of Kelsey's fieldwork in Coastal Otago. The recipe was selected because it was a favourite amongst the Hosts' children and previous WWOOFers.


Crust:                                  Rhubarb layer:                     Topping:

¾ cup flour                        4 cups diced rhubarb        ¾ cup brown sugar
½ cup rolled oats            ¼ cup boiling water            1 tbsp corn flour
¾ cup castor sugar
100g butter


  1. Put diced rhubarb into ovenproof baking dish.

  2. Make crust:

    • Sift flour and baking powder into a bowl, adding rolled oats and sugar.

    • Melt butter and stir into dry ingredients.

    • Mix well

    • Sprinkle crust over rhubarb.

  3. Make topping:

    • Combine brown sugar and corn flour.

    • Mix well.

    • Spoon topping over crust.

  4. Carefully pour water over; do not stir.

  5. Bake at 180 C / F for approx. 30 minutes or until cooked.

  6. Serve with custard or cream.
