Piklets

​This recipes was shared by Kiwi WWOOF Hosts as a part of Kelsey's fieldwork in Central Otago. The recipe was selected by the Hosts' as it is a Sunday morning breakfast favourite in the family, and because they served it with homemade jams from the family's orchard business. Thus, it also allowed them to highlight the orchard's produce and preserves when shared with their WWOOFers, as well as sharing a staple Kiwi dish.

Ingredidents

1 egg (beaten)
¼ cup castor sugar
1 cup milk (or more, as needed)
1 cup flour
1 tsp cream of tartar (leveled)
½ tsp baking soda (leveled)
Garnish:
Raspberry Jam
Cream, whipped with sugar

Directions

  1. Beat egg, add sugar and beat until creamy and fluffy. Add milk and incorporate.
     

  2. Add flour, cream of tartar, baking soda and salt.
     

  3. Beat until desired consistency, adding milk or flour as needed to make a pourable batter.
     

  4. Heat a skillet to medium heat, add a knob of butter to skillet (only to start). Pour batter to make 3” diameter circles. Flip when bubbles form and cook 1-2 additional minutes.
     

  5. Serve hot with a dot of raspberry jam and them whipped cream.
